Spring dressed potatoes
Its a shame that weather, here in UK, doesnt really feel like spring – the winds and down pours have taken over instead. But fear not…a quick whisk and at least your lunch can make you feel like spring is in the air!
2 medium boiled and cubed potatoes, a handful of boiled edamame beans (alternatively use any large beans like broad beans or kidney beans), 2 chopped spring onions, handful of finely chopped mint and coriander, ½ tablespoon roasted sun flower seeds, 1 tablespoon of broken walnuts, ½ chopped red pepper, a pinch of chilli flakes (or as per taste), salt and pepper to taste, 2 tablespoons of extra virgin olive oil, 1 tablespoon whole grain mustard, 1 tablespoon balsamic vinegar, ¼ tablespoon maple syrup (alternatively, use sugar or honey in the same quantity)
- In a small bowl, mix together the balsamic vinegar, maple syrup, extra virgin olive oil, whole grain mustard and chilli flakes. Give it a good whisk and keep aside for 5 minutes. Use this as the dressing.
- In a salad bowl, add all the remaining vegetables and nuts.
- Add salt and pepper to taste and dress the salad with the above made dressing.
- Serve with buttered crusty bread.
