Maggi pulao…Maggi rice

Believe me on this…NO Indian kid grows up without Maggi, and some of us dont ever grow out of it! How excited they get when new Indian students in a foreign land see Maggi in a local for the first time! Its a life saver :). Explaining this to the non-Indians, Maggi is brand of snack noodles, the boil+add condiment sachets type. This 3 minute noodle pack is a household name and Kid’s favourite, but I would more accurately describe the Maggi lovers group as a cult.

While Nestle India markets it only as noodles, as we Indians most often do, they are altered as per individual tastes and flavours, adding to the variety of ways they can be cooked. This one was my Mum’s adaptation…and my all time favourite.

Ingredients:

1 packet Maggi masala noodles, 1 finely chopped onion, 1 finely chopped tomato, 1 chopped bell pepper or capsicum, ½ cup boiled peas, ½ cup boiled and chopped potatoes, 1 cup boiled rice (completely non-sticky), 1 chopped green chilli, a pinch of turmeric, ¼ tablespoon chilli powder, oil to cook and salt to taste, coriander to garnish

Method:

  1. Add the required amount of boiling water, as indicated on the Maggi packet, and boil maggi noodles without the tastemaker for 3 – 4 minutes. Drain away the water after boiling.
  2. Heat oil in a pan and temper it with green chillies.
  3. Add the onions and cook them till they are translucent.
  4. Add the bell peppers and sauté them till cooked but still have a bite left.
  5. Add the boiled peas and tomatoes and cook for another 2 – 3 minutes.
  6. Add turmeric, chilli powder and Maggi tastemaker packet to the vegetable and fry the masalas for 1 – 2 minutes.
  7. Add the boiled rice and noodles to the vegetable and mix thoroughly, taking care that you don’t smash it all together. Cook for another 1 -2 minutes, mostly to ensure flavouring of the rice and noodles.
  8. Garnish with coriander and ENJOY!

Try a tip:

While Maggi is mostly a snack food and rice a tummy filling grub, it’s the vegetables that add to the nutritive value of this dish. The more you put, the better it will taste as well. Try adding ½ cup of boiled and chopped carrots and about 6 – 7 boiled and sliced long beans to the dish.
